Strada appoints new Executive Chef: Nico Tortorelli heads development of menu concepts
Strada, the collection of contemporary Italian restaurants, has appointed Nico Tortorelli as its new executive chef.
Based at Strada’s development kitchen in Finchley, Nico will further develop the company’s menus across its 69 UK restaurants. Born in Taranto, a coastal city in Puglia, Southern Italy, Nico is passionate about regional Italian food and he will devise new menu items to underline the restaurants’ strong heritage in local dishes that use bold, flavoursome, market fresh produce.
Under Nico’s guidance, Strada is currently rolling out new menus that reflect the summer’s harvest with regional dishes including Roma Cavatappi – cavatappi corkscrew pasta, chunks of Gorgonzola cheese, charred baby tomatoes, parsley and chives, and a hand-thrown super spiced Vesuvio pizza, built of N’duja pork sausage, Salsiccia piccante salami, roasted red peppers, red chilli, chilli oil and mozzarella. Nico’s signature pudding of Limoncello Trifle (layers of limoncello soaked sponge, lemon curd, amaretti biscuits and fresh whipped cream, with blueberries and mint) is set to be a sure-fire palate pleaser and perfect end to his taste of summer menu.
Formerly a regional chef, Nico has a long career with Strada, dating back to 2008. He comments: “I am delighted to be leading the development of our menus and to differentiating our product as the freshest and most authentic. We are passionate about Italian food, and I am looking forward to asserting Strada’s presence as the home of traditionally cooked Italian food in the UK.”
